Gold Fashioned

Golden beets are a bit sweeter, less earthy, and mellower than red beets; this makes them a good match for already-flavorful whiskey, without overpowering the palate. Combined with honey, water, and bitters, this makes for a unique Old Fashioned.

— Mike Augustyniak & Robb Jones, Meteor Bar

DIFFICULTY: MODERATE
TIME: 5 MIN
GLASSWARE: LOWBALL

Recipe:

  • 2 oz Far North Spirits Roknar or Bødalen Whiskey

  • ½ oz Beet Honey *

  • 1 Dash Aromatic Bitters (such as Angostura)

INSTRUCTIONS:

Combine all ingredients in a mixing glass (a pint glass will work, as well), add ice, and stir until chilled and properly diluted (approximately 10 to 15 seconds). Strain into a lowball glass over fresh ice, and garnish with a beet chip.

BEET HONEY:

  • 4 oz Honey

  • 2 oz Water

  • 2 oz Golden Beet Juice

Combine ingredients and shake or stir until well combined. Use right away or refrigerate for up to 2 weeks.
