Crispy Collins
“For this recipe, we’re going to make a quick simple syrup using the parts of the celery you normally wouldn’t use. Celery comes through much more aromatically than it does on the palate.”

Recipe:
- ¾ oz Simple Syrup 
- ¾ oz Fresh Lemon Juice 
- 1 Pinch Salt 
- 1 Dash Angostura Bitters 
- Celery Scraps, Plus 1 Nice Piece (For Garnish) 
INSTRUCTIONS:
In a shaker tin combine simple syrup, celery and salt. Muddle aggressively. Add remaining ingredients and ice, and shake hard. Double-strain, using a fine-mesh tea strainer, into ice-filled Collins glass. Top with soda water and garnish with celery leaves, or nice-looking celery stalk.
Simple Syrup:
- 1 cup white sugar 
- 1 cup water 
Heat over medium-high heat, stirring occasionally, until sugar is completely dissolved. Remove from heat, then cool. Use right away or refrigerate for up to 2 weeks.
