My Pep Pep

Every time Robb Jones and the team at Meteor Bar update their menu, I have to say goodbye to at least one new favorite cocktail. A recent retiree was the “Bell Ringer” — you’ll probably know it if you visited Meteor in the Spring or early Summer of 2022 — an earthy/spicy mix that just hit right. Well, today, enter “My Pep Pep,” which I shall refer to as “Son of Bell-Ringer.”

DIFFICULTY: EASY
TIME: 5 MIN
GLASSWARE: COUPE

RECIPE:

  • 1 Slice Bell Pepper

  • 1 Chunk Jalapeño Pepper (with seeds)

  • 2 oz Ida Graves Vodka

  • ¾ oz Fresh Lime Juice

  • ¾ oz Simple Syrup *

  • Pinch of Salt

INSTRUCTIONS:

Muddle vegetables in a shaker tin. Add remaining ingredients, plus ice; shake hard. Double strain (to ensure seeds are removed) into a chilled Coupe glass . Enjoy with a slice of melon.

SIMPLE SYRUP:

  • 1 cup white sugar

  • 1 cup water

Heat over medium-high heat, stirring occasionally, until sugar is completely dissolved. Remove from heat, then cool. Use right away or refrigerate for up to 2 weeks.
