This sparkling summer sipper makes use of light and airy flavors and ingredients. Cucumber and mint (great in any mojito, too!) combine to make an herbal base. The ginger liqueur provides sweetness balanced with spice, and brut sparkling wine gives a refreshing fizz.
- 2 thin cucumber wheels
- 3 lime wedges
- 1 ¼ oz Tattersall Gin
- 1 ¼ oz Domaine de Canton
- Gruet Brut sparkling wine
Prepare a Collins glass by twirling a thin slice of cucumber on the inside; add ice. Muddle ingredients, except sparkling wine, a shaker tin. Shake over ice, and strain into the iced glass. Top with sparkling wine, and garnish with a mint sprig.
