LoLo American Kitchen & Craft Bar owners Joe Ehlenz and Brad Nordeen are huge sports fans, and huge fans of Mark Rosen of KFAN and WCCO-TV. So, they have created a series of cocktails that are nods to Rosie's on-air antics, and the 'South Beach Retreat' (a reference to his Florida-based coverage of Minnesota Twins spring training) is the latest.
Tropical flavors -- including coconut, tequila, pineapple, and lemon -- meet a nutty, toasted coconut caramel syrup that's easy to make and store. Pick a higher quality coconut rum, and taste the difference as the flavors meld in a subtle nod to coconut, as opposed to an overpowering flavor.
- 1 ½ oz domestic coconut rum
- 1 oz reposado tequila
- ¾ oz pineapple juice
- ¾ oz lemon sour *
- ½ oz maraschino liqueur
- ¾ coconut caramel syrup **
*To make lemon sour combine equal parts of lemon juice and simple syrup, by volume.
** To make coconut syrup, combine equal parts coconut sugar and water. Bring to a boil to incorporate and dissolve sugar, let simmer for 2 to 3 minutes, and then cool.
Combine all ingredients in a mixing tin, over ice, and shake. Strain into a coupe glass that has been rimmed with a mix of toasted coconut and granulated sugar. Garnish with lime twist.
